Ingredients
1/2 pound Cold, Cooked White Rice
3 Eggs, beaten
1 medium Yellow Onion, diced
1/2 cup Green Onion, chopped
1/4 cup cooked Shrimp
1/4 cup cooked Pork
1 cup shredded Lettuce
4 tablespoons Vegetable Oil
8 tablespoons Light Soy Sauce
2 tablespoons Sesame Oil
1/4 cup cooked Chicken
1/4 cup Peas and Carrots
Salt and Pepper, to taste
Preparation:
Heat 1 tablespoon oil in a skillet until hot.
Add onions and cook until translucent.
Add eggs and soft scramble.
Remove eggs and onions and set aside.
Add 3 tablespoons oil and stirfry rice until hot.
Continue to stir and cook rice while adding soy sauce, salt and pepper.
Combine shrimp, chicken, pork and peas and carrots in the skillet.
Stir in the eggs and onions.
When all ingredients are hot, stir in green onions, lettuce and sesame oil.
